The sensors are very easy to interpret (and come with their RJ11 connectors):

The rain gauge is a gauge that activates a shutoff button for every 0.28mm of rain collected.

The anemometer encodes wind speed by simply closing a switch at each rotation. A speed of 1,492 MPH produces one switch closure per second.

The vane magnet closes two switches at once, allowing up to 16 different positions to be indicated.
